Samme Guo & Terry Yeh Restaurant: Applause Japanese Restaurant Signature Dish: BBQ Black Cod Training: They both worked at Richmond’s Japanese restaurant Daimasu, but at different times. Favorite Fast Food: "Food court combo, beef or chicken teriyaki," says Guo. "I would choose Burger Kings," admits Yeh. Years in the Industry: Guo has been in the industry for 18 years; Yeh, 13 years. Defining Dining in Vancouver: "Great! You are able to try all different kinds of food from terrific chefs from all over the world," says Guo. "Lots of fresh food and a lot of variety," adds Yeh. Home Cooking Tip: Yeh’s cooking must is, "always use fresh food" while Guo insists, "never add too much salt."
Secret Recipe . . . Beef Teriyaki
Sauce: 1cup soy sauce 1cup water 1 cup sugar 2 teaspoons Sake 2 teaspoons Mirin Boil until sauce thickens, approximately 10-30 minutes. If needed, add cornstarch to thicken.
Meat: In a separate pan, fry beef in oil until it changes color. Approximately 1-2 minutes. Add vegetables of choice. Stir in sauce. Table for Two?
